I like stuffed anything (including teddy bears!). The idea of stuffing certain mix of ingredients within another has always fascinated me. Let it be vegetables, fruits, or a flour based shell (like samosa, puffs, egg rolls etc.) stuffed with a spicy or sweet mix, I love it all. I have even stuffed my hash browns. Ela Ada is another favorite stuffed item which has a yummy sweet filling.
To make stuffed jalapenos, you will need about 10 fresh jalapeno peppers. Cut them half lengthwise and remove the seeds. Remove all of the seeds unless you want it spicy. Use gloves when you work with spicy peppers.
Preheat oven to 375 degree F.
Mix 1/3 cup of cream cheese with ½ a cup of grated cheddar cheese. Add salt and pepper if needed. You can also add dried basil or oregano for extra flavor. Add a tbsp of mayonnaise or yogurt. Mix it well and stuff the jalapenos. Keep aside.
The measurements are approximate. You can try different cheese mixes as well.
In a bowl, beat one egg with 1 tsp of water. In another bowl, take 1 cup of breadcrumbs.
Line a baking sheet with foil paper. Take a stuffed pepper, dip in the egg wash, roll it in the breadcrumbs, and place it on the tray. Repeat for all the peppers.
Bake it for about 30 minutes, or until the cheese stuffing is bubbly and the bread crumb coating is golden brown.
Eat it until you are stuffed! Seriously, this is so addictive. You just can't stop reaching for one more!
