Avil Payasam/Pounded Rice Pudding

“In this quick and easy version of rice pudding, long-grain rice is substituted with avil(pounded rice), which takes very little time to cook.” Says Ms.Ammini Ramachandran. This is one recipe I tried out from her cookbook recently.

I halved the ingredients given in the original recipe. This is how I made it:

Rinse ½ a cup of avil/pounded rice, and drain.

Bring ¼ gallon of whole milk to a rolling boil in a heavy saucepan. I used 2% milk.

Reduce the heat, and add avil.

When it boils again, add 1 cup (more or less to your taste) of sugar.

Stir, and let it cook for about 10 minutes. Stir periodically to prevent the payasam sticking to the bottom of the pan.

Add ½ cup of cream, and simmer for another 15 minutes. Turn off the heat.

Heat 1 tbsp of ghee in a skillet, and fry cashews and raisins until golden brown. Add it to the payasam.

Sprinkle ½ tsp of cardamom powder.

Serve warm or cold.

We used to prepare on the day of Lord Krishna's B'day as Aval is his favorite. I used to fry it in the ghee before boiling just for flavor. Very nice RP. Viji

manisha, I used Swad brand. Actually I was looking for recipes using pounded rice to finish off that big bag of it I had in my pantry for a long time now. But this recipe used only 1/2 a cup! I was drafting this post in a hurry and I knew I forgot something. Yup! I wanted to link to your rice payasam(ammini's) post. Will do it soon. :)

RP, I tasted avil payasam almost 10 yrs back from a friend's house and it was soo tasty and i have never had such a tasty one after that.... I think I will give this a try and see if I can satisfy my taste buds!

archana, you are right. It tastes good either way. But I like it warm.

cynthia, me too. But I hesitate to make it with the rice since the process is long, and I don't like the pressure cooker method. So this one is for me!

vcuisine, I too saw a recipe that suggests frying avil in ghee first. But I always prefer simple recipes, and when I saw this recipe of ammini's, I knew I had to try this.

mallugirl, me too..wanted to try avil payasam ever since I saw it at vkn's my dhaba for the first time.. I think his recipe suggests frying the avil in ghee first.

RP, that pot is such so wonderful! And all those plates on the left side, too! The one with the snowman and the Xmas tree rocks! The pumpkin is also way cute. Do you use any of them? You can use them to serve stuff like pistachios, peanuts or even a dip.

Did she make the suncatchers, too? And that butterfly, too? Oh big hugs to your cutie!!

manisha, thanks! Her arts teacher at school was teaching a lot of pottery art this year..so I got so many cute things. :) Since the finishing inside the plates isn't perfect, I didn't use it for serving anything as yet. But serving nuts is a good idea. I buy suncatchers and knitting kits for her to do at home, just to distract her from tv and pc/video games. She has completed a few more knitting and suncatchers as well...A couple of my blogger friends were pestering me about making a blog post of her works. I just couldn't get around to doing it. Since you also asked, I just loaded them onto my sidebars. :)

rp, i have never tried payasam with aval. but i love white payasams compared to brown ones so i will give this one a try. looks tempting..slurp!!!
