Butter at room temperature - 1/4 cup
Egg - 1
Sugar - 1/2 cup
All purpose flour - 1 cup
Baking powder - 1 tsp
Salt - 1/8 tsp
Milk - 1/4 cup
Vanilla - 1/2 tsp
Blueberies - 1 cup, fresh or frozen
Preheat the oven to 375 degree F.
Take blueberries in a bowl. Sprinkle with some flour and toss to coat.
Cream butter and sugar together until it is nice and smooth. Add egg and whisk to incorporate. Sift flour, baking powder, and salt together and add it to the sugar-butter-egg mixture. Add milk and mix everything together with a wooden spoon. Add vanilla. Add the blueberries and gently stir to incorporate. Pour into muffin tins and bake 35-40 minutes or until a toothpick inserted at the center of a muffin comes out clean. Remove from the oven and cool on wire racks. This recipe makes 6 medium size muffins, but you can easily double or triple it.

They look really good. Recipe sounds really easy. Never baked a muffin before. Your rasmalai was the only time I used the muffin pan. Seems like this post will make me use it again. You are such an inspiration.

Hi,
I am planning to start baking. I have never done that before, and so have a lots of doubts.
First doubt is what type of an oven do u use for baking?
I am planning to buy a microwave oven, and the sales person tells me it can be used for baking also. I am a bit apprehensive of using microwave oven for baking.
Can you please help me on this?
Thanks
Anna
Hi anna, my gas range came with a conventional oven and I use that for baking. Some microwaves have baking feature, but some don't. My microwave doesn't have the baking feature. Look for some reviews online for the brand you plan to buy. Also, check out the manufacturer's website to see the product details before you buy.
Hi RP,
Tried ur recipe exactly as it is. Muffins came out great. Thanks.
