Puttu & Kadala curry!


Puttu & Kadala curry is one of the most popular breakfasts of Kerala. You can also serve puttu with ripe bananas, steamed plantains, egg curry, fish or meat curry.

I use instant puttu mix. All you need to do is mix the flour with warm water, fresh coconut and salt. Add enough water until it holds shape when you form a ball. But don’t make it like dough by adding too much water. I use a puttu maker that sits on top of the pressure cooker vent. The steam coming out of the cooker vent will cook the puttu in 3 to 5 minutes. Priya has posted a pictorial on making puttu here. Another pictorial here. Using coconut shells instead of puttu maker(shown in the second pictorial) is another method, but I haven’t tried that yet. Make a hole on the bottom of the halved coconut shell, fill it with the wet puttu mix, and place the coconut shell on top of the cooker vent for steaming.

Here is how I make kadala curry:
Black chana – 1 cup
Red onion – 1 big
Garlic – 4 to 5 cloves
Ginger – 1 small piece
Green chillies – 3
Tomato – 1 big
Curry leaves – a few
Chilli powder – 1 tsp
Turmeric powder – ¼ tsp
Coriander powder – 1 tbsp
Garam masala – 1 tsp (optional)
Coconut milk powder – 2 tbsp (optional)
Oil
Salt

Soak black chana overnight and cook with salt and enough water.
Finely chop the onions. Crush garlic and ginger. Slit the green chillies. Chop the tomatoes.
Heat up oil in a pan and sauté the onions until they change color. Add garlic, ginger and green chillies and cook for 3 minutes on medium heat. Add all the masala powders and coconut milk powder if using, and cook until the oil separates from the sides of the pan. Add tomatoes and the chana. If there is enough water in chana, you don’t have to add any extra water otherwise add 1 cup of water. Add curry leaves and bring to a boil. Simmer for 5 minutes or until you get the right consistency.
I used Maggie coconut milk powder.

Here is a picture of puttu made with brown rice flour. Some people (like my husband) think that brown puttu is the best. Some people (like my daughter) think puttu has to be made with white flour. And there are some people (like me) think that both brown and white puttu are just as delicious.

Do we get brown rice puttu mix also? i have tasted white puttu but not brown rice puttu. can u tell me how to make brown rice puttu flour at home or where to buy it. they looks sooo tempting.

The other day at a Srilankan grocery store, I was looking at Red colored rice and was thinking, maybe I can try making puttu out of it.. or maybe I'll look around to see if they have any readymade puttu flour out of that red rice.

pushpa, I haven't tried it with coconut and palm sugar yet. I would prefer it with something little spicy, banana is an exception.

Kz, I buy brown puttu mix from Indian grocery stores. If you have the regular brown rice flour, you can try that as well.

l g, ya its awesome! One who doesn't have any idea of making puttu(or any other south indian breakfasts displayed), can easily learn from those pictures.

kavitha, I haven't tried ragi puttu yet. Have seen the ragi flour at Indian grocers. I would assume we just follow the same recipe with ragi flour? Or is it different as it appears here?

vineela, using puttu maker will give beautiful cylindrical shaped puttu. You can use the coconut shell-pressure cooker method also.

Kay, Yay!!! You are back! So how was the move? I depend on the puttu mix because sometimes I don't get the softness when I use the regular rice flour.

santhi, I hope you would be able to try it soon. Good luck on getting perfect halves. :) Man, I think we should invent some alternative contraption for making puttu.

I came to know about this famous Kerala breakfast combination from Priya of Priya's Kitchen blog and I tried the kadala curry and it was awesome and I've also blogged about it.

Puttu I've yet to try. The second link from egullet is really awesome, finally I can send people to this link when they ask me about how to break a coconut. Could you believe here they instruct people to warm coconut in over for half an hour before breaking. Unbelievable!

shankari, I was going through Priya's recipe and my recipe is almost the same except that I didn't add coconut this time, thats why the picture looks different. But I do add coconut most of the times to enhance the taste. So please check out the above link.

Kay, I don't have an indian mixie. Mine is Oster brand. But I would love to know your recipe. I have seen my friend soaking rice and then grinding it to a coarse powder for making puttu. But I don't know exactly.

Thanks for your kind words on Mahanandi, RP!As I mentioned to another Kerlaite blogger,have had this at the homes of Sri Lankan tamil friends..and Sri Lankan cusine seems very closely aligned with Keralaite. Must be the coastal thing...Puttu with a particular tomato gravy is my all time fave.

the pictures are great! the puttu looks fresh and mouthwatering. I use the brown rice powder available at the local shops here. and i cook it in the puttumaker that can be placed over the pressure cooker. But my puttu usually turns out dry and crumbly instead of being soft and moist. do u have any idea as to why this couold be happening?
