
Kale – 1 bunch, coarsely chopped
Onion – 1 tbsp, finely chopped
Ginger – 1 tsp, finely grated
Green chillies – 3, slit
Grated coconut – 3 tbsp
Turmeric powder – ¼ tsp
Salt – to taste
Mustard seeds – ½ tsp
Whole urad(black) – ½ tsp
Mix the coconut with onion, green chillies, ginger, turmeric powder, and salt in a bowl. Rub these together very well with your fingers. Keep aside. Heat oil in a pan and add the mustard seeds & whole urad. When they start to splutter, add the chopped kale leaves followed by the coconut mixture. Fry on a medium heat with continuous stirring until all the leaves are wilted. Lower the flame and keep on cooking covered for another 5 minutes with occasional stirring. Serve hot with rice.

Vineela, thoran is a Malayalam word which means a dry side dish with coconut added. You may use other vegetables such as cabbage, carrot, green beans, beets, drumsticks, kovakka/tindora, or any other greens, or I have even seen fish thoran!!
Lakshmi, this is the first time I have made it too. When one of our friends brought us dinner when I was recovering after delivery, one of the side dishes was kale thoran. I liked it then, and finally prepared it myself after a year!!
Santhi & Tanuja, I hope you will like it. My husband said it tasted better than spinach. Kale doesn't leave a lot of water while cooking like spinach. So we can make it a perfect dry stir fry.
Goodness that recipe could actually make me buy that vege :-) I just drop kale in a dal but have never tried it as a dry usal kind of thing.
kale as a thoran- cool, combo! have you tried any other greens for thoran, mustard/collard etc? do you think they will work as well?

ashwini, as I have already said kale is perfect for a dry stir fry. It won't get mushy and watery like spinach. I haven't tried adding it to the dal yet.
reshma, I haven't tried mustard or collard greens as a thoran, but I know my friend makes thoran out of collard greens. Same recipe.
BSDN, hmmm the picture would have been greener. You didn't notice the brown spots, did you? Actually it burned! But my husband likes anything that is slightly burned. So he was happy.
gini, it won't turn watery. Actually there is NO water in this leaves compared to spinach.

I did try this...it was good, kale, eating for the first time was a bit bitter, But thanks to you RP, if not for your recipe, I wouldnt have mustered the courage to try Kale.... Thank You...Aruna.
